You’ve been patiently waiting for the summer hubbub to die down so you can join us here at The Bearcamp Center for our annual BBQ, held this year on Saturday October 3, with regionally-sourced meats brined and smoked to perfection by the soon-to-be-renowned Mike Cheney of Night Sky Barbecue.
This year, Mike will be serving up St Louis cut pork ribs with salt and pepper rub, finished in a maple glaze; meltingly tender brisket; and green chile and cheddar or ground mustard/cayenne/garlic pork sausages. All smoked on post oak wood. Each meat gets its own pickle, also made by the Night Sky Barbecue team. It’s an easy night for us in the kitchen as we make the side dishes and dessert–and then get to serve you all!
Sides will include creamy herbed rice and beans with a green chile adobo and freshly-grated queso cheese; garlicky grilled portobello mushrooms with chimichurri; and red cabbage slaw with all the herbs left in the garden. Hilary will bring all the sweetness to the meal, with a dessert of some delectable thing or another. Details on that to come.
This entire feast is served to all who want to partake, entirely by donation. Pay what or if you’re able or what you feel this food is worth to our community. RSVP by September 28 with number of meals for take out OR number of seats for dining in. Take out dinners will be ready between 5-6pm. Seating for dining in is at 6:30. BYOB.
